Himozin (EC 3.4.23.4, rennin) je enzim.[1][2][3] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Široka specifičnost poput pepsina A. Zgrušavanje mleka putem razlaganja jedne Ser-Phe105-Met-Ala veze u kapa-lancu kazeina
Ovaj neonatalni gastrični enzim efektivno zgrušava mleko i ima slabu opštu proteolitičku aktivnost.
