Would it be possible to add REST API support ? It would be great to have a separate JSON field when using the GET /wp/v2/posts/<id> endpoint for example.

There isn't. That's a project proposal which only includes a section for "People interested", not a discussion with pro/against like you'd see in a RfC. There is too many dependencies to just copy the template :/ The langswitch template send the iso code language of the user interface. If I have my interface in French, the template will send "fr". It probably need a module. I've heard about somthing in php like a getLanguage() but I'm not sure. And creators of the template are now inactive :/
