A portal dedicated to food and foodways
Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtain food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
Modern Cookery for Private Families is an English cookery book by Eliza Acton. It was first published by Longmans in 1845, and was a best-seller, running through 13 editions by 1853, though its sales were later overtaken by Mrs Beeton. On the strength of the book, Delia Smith called Acton "the best writer of recipes in the English language", while Elizabeth David wondered why "this peerless writer" had been eclipsed by such inferior and inexperienced imitators.
It was one of the first cookery books to provide lists of ingredients, exact quantities, and cooking times, and to include Eastern recipes for chutneys. (Full article...)
A food truck is a large motorized vehicle (such as a van or multi-stop truck) or trailer equipped to store, transport, cook, prepare, serve, and/or sell food.
Some food trucks, such as ice cream trucks, sell frozen or prepackaged food, but many have on-board kitchens and prepare food from scratch, or they reheat food that was previously prepared in a brick and mortar commercial kitchen. Sandwiches, hamburgers, hot dogs, chicken, tacos, pizza, french fries, and other typical fast food and finger food staples are common food truck fare, though since the pop-up restaurant phenomenon of the 2010s, food trucks specializing in a wide variety of gourmet, specialty, global, regional, and fusion cuisines have seen growing popularity. Food trucks often also sell or fully specialize in beverages such as soft drink, juice, coffee, tea, and water, as well as treats such as ice cream, pastries, and fried dough. (Full article...)

Alexis Benoît Soyer (French pronunciation: [alɛksi swaje] 4 February 1810 – 5 August 1858) was a French chef, philanthropist, writer and inventor who made his reputation in Victorian England.
Born in north-east France, Soyer trained as a chef in Paris, and quickly built a career that was brought to a halt by the July Revolution of 1830. Moving to England he worked in the kitchens of royalty, the aristocracy and the landed gentry until 1837. He was then appointed head chef of the Reform Club in London, where he designed the kitchens on radical modern lines and became celebrated for the range and excellence of his cooking. His best-known dish, lamb cutlets Reform, has remained on the club's menu since the 1840s and has been taken up by later chefs from Auguste Escoffier to Prue Leith. (Full article...)

François Pierre de la Varenne (French pronunciation: [fʁɑ̃swa pjɛʁ də la vaʁɛn], 1615–1678 in Dijon), Burgundian by birth, was the author of Le Cuisinier françois (1651), one of the most influential cookbooks in early modern French cuisine. La Varenne broke with the traditions that had revolutionised medieval and Renaissance French cookery in the 16th century and early 17th century. (Full article...)
