home/gtk: set font size

This enables wezterm to listen for changes from the portal and reload
instantly. Also fixes the issue where it would keep the light theme even
when switching to dark mode.

- add `delta` theme switching
- change gtk theme accent

Remove clunky `_module.args.theme` in favour of `programs.matugen`, a
module that can be used both in NixOS and in Home Manager.

Fixes light GTK theme not being set to Catppuccin.

It is now being handled by `nix flake check` using pre-commit-hooks.
