Lumpia is Filipino for Spring Rolls. It is simply minced pork and vegetables wrapped in pancake.

There are many types of "Lumpia" including:

Lumpiang Shanghai - obviously with Chinese influence, this variant is done with minced pork, onion, beaten egg (sometimes), green peas (sometimes), carrots, and spices. It is then fried. The sauce prepared for this variant is of sweet sour blend, much like the once the Chinese introduced it with.

Lumpiang Sariwa - Sariwa is Filipino for "Fresh" as this variant is not fried like the rest. Lumpiang Sariwa is minced "ubod" (banana tree trunk), turnips (extender), chicken, onions, crushed peanuts, and a single lettuce leaf wrapped in an yellowish egg wrapper. The sauce prepared for this is made with chicken or pork stock, starch and fresh garlic.

Lumpiang Prito - Prito means "fried". Thus, this one like Lumpiang Shanghai is fried. Beans Sprouts are wrapped in pancake and then fried briskly. The sauce for this one is simply soy sauce. This variant is enjoyed due to cheapness of the ingredients, though the cleaning of the bean sprouts can prove quite annoying and tasky.
