English: Home-made Irish brown soda bread. The basic ingredients were white flour, wholemeal flour, bread soda, a pinch of salt, buttermilk, and an egg. Optional ingredients included were a cup of 2:1 mix of wheatbran and wheatgerm, sunflower seeds, and sesame seeds. Chlorogenic acid in the sunflower seeds reacted with the alkaline baking soda, turning the seeds metallic green (one such seed is visible in the slice in the picture). A pinch of flakemeal was scattered on top of the dough before baking.
