A crompouce' is a cross between a croissant and a tompouce^[1] which became a hit on social media platforms in 2023, in addition to being registered as a brand name. ^[2] Instead of puff pastry, croissant dough is used. The croissant is cut open and filled with pastry cream and topped with a layer of pink glaze.^[3] However, the disadvantage of croissant dough is that the dough is softer, making the cream more likely to leak through.^[4]

The delicacy in its current form and under the name crompouce was created in 2020 by Bammetje Bakery from Utrecht.^[5] After the crompouce of Bakker van Maanen from Katwijk had become a rage in 2023 on the social media platform TikTok,^[6][7] bakers all over the Netherlands went on to sell the product.^[8][9][10]

In the province of Zeeland, a so-called pink flap has been baked since around 1993. The crompouce shows strong similarities to this delicacy. However, a pink flap is made of puff pastry instead of croissant dough and has a slightly different shape (triangular).^[11]

At Bakkerij de Leeuw in Zegveld, cream-filled croissants were sold for a while around 2003. The crompouce also shows strong similarities to this, only the bakery did not use pink icing.^[4]

The crompouce was named delicacy of the year 2023 by Kek Mama magazine.^[12]

On 15 November 2023, the original creator criticised other creators, such as supermarkets, who she said had copied the crompouce. She took legal action for this.^[13] Following these legal actions against companies such as Albert Heijn, one of the supermarkets that sells crompouces, the crompouce has been renamed Tompouce Croissant in some shops. ^[14] The maker does not have a patent on the product, but does have a patent on the brand name crompouce. According to the Rijksdienst voor Ondernemend Nederland, a patent is not possible either, because it is not a technical innovation.^[15]
